Things I Ate Last Week: Recipe Share

I need to preface that this post was written in a perfect, little coffee/grilled cheese oasis, which in my opinion, is an excellent place to write about food. I’ve been living in DC for the majority of the past two years, but the thing I’ve found missing is an abundance of excellent coffee shops — the kind where the music is great but low-key, the baristas are kind and there’s no fear you’ll get kicked out of a great table for just ordering a coffee. It doesn’t hurt that the patio is surrounded by flowering trees either.

Anyway, I thought that I would share a little bit of what I’ve been making lately — a weekly round up of recipes I’ve made and liked and a few meals I’ve had out. I usually try to add one or two new recipes to avoid getting sick of my go-to favorites (there can be too much of a good thing). In general, I’m not opposed to eating meat on special occasions with my family or on my travels, but everything I cook at home is vegetarian or vegan. Part of the appeal was the opportunity to try new things in the kitchen and during that time I’ve learned I love things I swore I hated (looking at you all, mushrooms, squash and peppers). Plus, I know if this steak/burger/chili dog-loving soul can embrace this mostly plant powered food, anyone can.

I’m also going to keep this series real and include a few things that are in no way about veggies (like that ice cream float and my ritual Saturday morning bagel). My body loves the plants, but my soul needs that cream cheese.

Let’s get to the food! Otherwise known as what I remembered to photograph last week.

IMG_3429Eating out: Despite my best intentions and the meal plan I diligently madke to ensure I’m not wasteful…I inevitably go off track once or twice a week when cooking seems like a chore. Union Market is approximately a 3-minute walk from my doorstep and brings along a so many delicious temptations. Luckily for me, Takorean‘s tofu tacos with kale slaw and all the fixings aren’t too guilt-inducing, and they’re so darn good.

IMG_3403My go-to snack: Picture hunger, but it’s not yet meal time, and I’m trying to forget that I bought a box of toaster strudels last week in a moment of weakness. Enter: this bowl of goodness! Honey, chia, hemp and flax seeds mixed in a dollop of plain greek yogurt and topped with berries and an individual pack of trail mix from Trader Joe’s. It’s honestly more delicious than an ice cream sundae after dinner. It also helps to load up your pantry with great toppings to throw on things like this. Other suggestions — sunflower seeds, coconut flakes and nut butters. P.S. Has anyone tried coconut yogurt? Yay/nay?

IMG_3512Tried favorite: Mushroom tacos from Runner’s World! Tacos are probably my favorite food item and these are far too good to wish the filling was meat. It’s not the easiest to pack for lunch the next day (lots of moving parts), but it’s perfect for a fun Sunday night dinner before a new week begins. I top mine with cilantro, onion and a squeeze of lime but black beans, guacamole and Sriracha don’t hurt.

IMG_3454The new guys: Sweet potato burgers and quinoa chili. I’ve cooked my share of misses before — things that tasted fine but not great — but I won’t hesitate to make these two things again! The burger was a nice change from my regular black bean recipe and worked just as well topped with hummus or avocado in a bun or paired alone with roasted vegetables. Mmmm.

IMG_3444I consider chili a year-round staple because it’s packed with vegetables, legumes and tastes delicious, but every now and again I like to see if I can top my favorite recipe. FYI — I added two medium sized, microwaved sweet potatoes and an extra can of black beans to this chili recipe because I like a thicker consistency and loved it!

Processed with VSCOcam with c1 presetSides: Cripsy, oven-fried sweet potato fries! I had a couple extra sweet potatoes leftover, did a quick Google search for a recipe, and I made fries! I highly recommend following the suggestion to season with a little paprika. It was subtle and good. I also used half the amount of olive oil, and they turned out just like I wanted.

IMG_3442Dessert (Out): A blueberry shrub float from Buffalo + Bergen where they handcraft the soda before your eyes. I’m not a big soda drinker, but I can’t resist experimenting with new flavors here. My favorite is peppermint coke!
