Thinking Out Loud: Snacking, Holiday Weekend and Training

Happy Thursday, everyone! I am currently writing on my lunch break and enjoying leftover Blissful Basil’s Spicy Cauliflower Rice, Cinnamon-Paprika Sweet Potatoes and Avocado Mash. As the sweet potatoes and mash were warming in the microwave, a coworker nearby remarked that it smelled so good — and it does! Try this recipe out one night because it’s such a delicious combination of flavors and packed with all the good stuff. Also…how impressive do you sound when you say the whole recipe name out loud? 😉

Speaking of lunches, does anyone else pack a ton of snacks for their work day? I need a stocked arsenal at all times…hangry is a real emotion. I packed Alex’s lunch a few days ago, and he told me when he unpacked it in the office, his coworkers asked, “Are you expected to eat that all of that at once?!” Haha! I’m officially the super weird (hungry), over-packing girlfriend. Snacking all day is highly recommended in my book! My favorites? Apple slices and almond butter, sugar snap peas and cucumber slices, sliced strawberries, Lara bars, and veggie stick “chips” from Trader Joe’s to satisfy those salty food cravings.

On another random note, I dressed really quickly this morning with the clothes I picked out the night before (total life-saver) and didn’t realize until I walked out the front door that my shirt is a little more sheer than I anticipated…arghhh. Guess who is buying a cheap tank-top before working at J. Crew today?!

In true retail fashion, I am working every day this Holiday weekend, but on the bright side, my family is driving to DC tomorrow! It’ll be painful to be at work while they’re here, but I’ll enjoy every minute with them before and after. I am a little nervous about having them visit on the most tourist-congested weekend in our nation’s capital, but there’s no one else I’d rather brave the crowds with! I’ve stayed away from the National Mall festivities in the past, preferring to find friends with rooftops ;-), but this could be a good excuse to enjoy the experience.

Before they arrive, however, I have another three mile walk/run this evening. I should have done it this morning, but I needed that extra hour of sleep before a two-job day. I’d say Tuesday’s workout was successful — I did a decent share of regular squats, sumo squats, and lunges with a 10lb weight before heading out, and my legs felt it during those little 0.5 mile runs. I’m not sure if it’s the time off running, the weights or a mixture of both, but my legs were heavy. It’s not the kind of half marathon training I envisioned I’d be doing (I wanted to run all of my miles) right now, but I’ll take what I can get. Looking forward to writing my first week of training recap next week!
